I bake this loaf for the kind of week when good bread makes every meal easier. It has an open, airy crumb and enough structure for toast or sandwiches. Since it’s naturally leavened, I give it time and bake it fresh for local pickup.

how I keep the crust crackly

Store & serve

  1. Eat bread early

    The crust is at its best the day you pick it up, when the loaf still has that fresh-baked crackle.

  2. Keep it simple

    I store a cut loaf cut-side down on a board, or tuck it into a paper bag if it needs to sit overnight.

  3. Re-crisp the loaf

    To wake the crust back up, warm the loaf in a 350°F oven for about 10 minutes before slicing.

  4. Freeze for later

    For a longer stash, slice the loaf once it is cool, wrap it well, and freeze what you will not eat right away.
